The subject of my master's thesis was as follows in order to find foods that secrete insulin less and do not raise blood sugar much; , (lentils)] Investigation of the effect on blood sugar and insulin levels in patients with Type II Diabetes Mellitus (diabetes).
All subjects, both diabetic and non-diabetic, were fed the foods I mentioned above, namely sugar (Glucose), potatoes, rice, white bread, corn bread and legumes (lentils), and after eating 1,2 After 3,4 hours, blood sugars and insulin values were checked.
The foods that secrete the most insulin are sugar and potatoes in both the patient group and the normal human group.
The most sugar and potatoes are respectively. corn bread, rice, bread and legumes (lentils).
Lentil and bread gave the least insulin value. Although the bread was chosen white, it secreted less insulin. If the bread with a high amount of carbohydrates is eaten in sufficient quantities, it both keeps you full and does not prevent weight loss because it does not secrete much insulin.
The results match with other sample theses. Based on these researches, very good menus can be created for people with diabetes (diabetic) and irregular blood sugar, that is, the insulin hormone is secreted irregularly.
There is no wholemeal bread in this study. But wholemeal bread is the food that secretes the least insulin hormone. Since the amount of pulp is high, pulp; It prevents the absorption of sugar (carbonitrate) in the whole wheat bread from the intestines into the blood and does not increase blood sugar quickly, so it does not secrete much insulin hormone. That's why it keeps you full, it is the most important assistant of those who lose weight. However, eating wholegrain products for a long time causes anemia. It is necessary to have the blood iron level checked frequently. If there is a deficiency, it requires treatment.
Fruit was not included in this study. However, because fruits contain glucose and fructose (fruit sugar), which are called simple sugars, they raise blood sugar more quickly. Fructose (fruit sugar), though, does not raise blood sugar as quickly as glucose. But other carbon They raise blood sugar more quickly than foods with urine. For this reason, fruits should not be used as a snack in both diabetes (Diabetic) diets and weight loss diets while hungry. It should be used after meals. Because if the sugars (Glucose and Fructose) in fruits are used together with other nutrients, their absorption will be slower. Because other nutrients slow down their absorption. 1 or 2 servings (150-300 g) per day is sufficient. The daily requirement of vitamin C for an adult is 30 mg. A medium-sized orange contains 50 mg of vitamin C. It seems that there is no need to eat more fruit. Raw vegetables also contain high levels of vitamin C. This need can already be met by eating plenty of salad in diets. eg; Parsley, tomato, lettuce and pepper contain high levels of vitamin C.
Legumes are the foods that raise blood sugar the slowest and secrete the least insulin. But they contain high levels of carbohydrates. They can be used instead of bread in carbohydrate-restricted diabetes and weight loss diets. eg; Even if he uses 4 tablespoons of legumes instead of 25 g of white bread, we will get the same carbohydrate as the carbohydrate of the bread. Eating both bread and legumes can stop weight loss. It can raise blood sugar in diabetics. In order to avoid such mishaps, it is more appropriate to replace a carbohydrate-rich food with another carbohydrate-rich food. eg; When we eat potatoes, we need to remove the potato from the menu when we eat bread or rice.
Vegetables are indispensable foods for weight loss and diabetic diets because they contain both low calories and high levels of vitamins and minerals. Except for potatoes, we can use all vegetables abundantly.
I would like to clarify this issue. Carrots are generally not used in weight loss and diabetic diets. Because they contain a lot of sugar. However, carrots are in the group of vegetables that contain a little more carbohydrates, which we call group B. However, it does not contain as much sugar as fruit, nor as many carbohydrates (complex) as potatoes. Moreover, the pectin contained in it is very valuable due to the molten pulp. It is quite low in calories. Therefore, it should be an indispensable nutrient in such diets.
After eating starch, the bonds between glucose are broken down by digestive enzymes in the stomach and intestines and The released glucose is absorbed. Therefore, it needs time to be digested and absorbed. Some complex carbohydrates can be broken down and absorbed more quickly. Like starch, which is the complex carbohydrate in potatoes, this starch is high in amylopectin. Some of them are broken down and absorbed more, eg starch in legumes, which is high in amylose content in this starch. They are different. The harder they break down and the harder they are absorbed, the more they increase blood sugar and the less insulin they secrete.
