Intense work tempo and a hectic life have been causing various problems lately. Individuals who cannot find the time or opportunity to cook during the day are forced to meet their nutritional needs in restaurants or cafes. This brings to mind the question of whether it is clean or whether the necessary environmental conditions can be provided. Since most businesses do not meet these conditions, different bacteria growing in food cause food poisoning.
There are 4 types of bacteria that cause food poisoning. The first and most common of these is the staphylococcus bacteria. It occurs in meat, milk, dairy products and salad. Symptoms appear 2-3 hours after eating and the body shows a vomiting reaction.
Another type of bacteria that causes food poisoning from meat, milk and salad isshigella. But the time it takes for this to appear is 1-2 days. Symptoms include nausea, vomiting, fever, cramps, abdominal pain and blood in the stool.
The most serious and fatal food poisoning is the poisoning caused by the bacterium clostridium botilinum. It can be found in canned foods, meat, vegetables and fruits. It paralyzes, prevents breathing and results in death.
Finally, we can talk about the bacterium called bacillus cereus. This bacterium is found in rice and causes food poisoning, manifested by nausea and vomiting.
The survival or reproduction of these bacterial species is prevented in foods with high acid content and at high temperatures. What precautions can we take to protect ourselves from these is the real question. In order to be protected, we must put some measures in a permanent place in our lives. These precautions;
- When consuming milk, we should be careful not to use street milk, because the boiling method, which is the traditional method we use to purify street milk from bacteria, causes the nutritional value of the milk to decrease and at the same time it may not be possible to provide the necessary sterilization. If we want to take precautions against Salmonella, we should prefer milk and dairy products that are pasteurized or packaged using the UHT method instead of street milk.
- When purchasing eggs, which are the highest quality protein after breast milk, be careful that there are no cracks. and be sure to wash before use. We are. It is not right to wash the egg and put it in the refrigerator. Storage in this way causes the egg to deteriorate due to water being removed from the pores. It would be appropriate to wash the egg just before use.
- E.coli can be transmitted through raw or undercooked minced meat, unpasteurized milk and dairy products, and spring water under adverse conditions, which has been frequently encountered in the media lately. . For this reason, you should get water from reliable sources, pay attention to personal hygiene and stay away from uncooked meat group foods.
- When cooking meat, we should make sure that it reaches the ideal cooking temperature (65°C). Of course, we may not have the chance to adjust this temperature when cooking at home, or we do not have the opportunity to measure it exactly when we eat outside, so we should prefer well-done meat.
- Oven and grill, which cook food at equal temperatures instead of frying it.
- We should never leave food that we cook and consume later to cool at room temperature on the counter and/or stove for more than 2 hours. We should not leave cooked food at room temperature for more than 1 hour during the summer months when air temperatures increase.
- We should wash fruits with plenty of water before consuming them in order to avoid poisoning due to pesticides and insecticides.
- We should heat canned foods a little before consuming them.
- We should not reheat more than once. If the food will be reheated, the amount of food should be separated and heated.
- We should not keep dry foods such as grains and legumes in humid environments. Dry and cool environments will prevent bacterial growth in these foods. It would also be more appropriate to store it in glass jars instead of plastic.
IF FOOD POISONING HAS OCCURRED;
- Any nausea, vomiting, fever, cramps, abdominal pain In case of pain and bloody diarrhea, it is necessary to go to the nearest health institution.
- In case of diarrhea and vomiting, you should rest and increase your fluid intake with clean water, buttermilk, mineral water, unsweetened tea.
- If you have diarrhea; rice porridge, yoghurt, banana, peach, You should consume boiled potatoes.
- Avoid eating in unfamiliar places.
