I would like to explain one of the questions I have heard frequently lately in this week's column. What is this gluten-free diet? Let's examine whether this thing we call gluten is really the bogeyman and if we avoid it this much, will we really get rid of obesity and indigestion problems? Gluten; It is an elastic protein group found in grains such as wheat, barley, rye and oats. In a way, it is a grain protein. The primary use of gluten is in bread making. Normally, bread cannot leaven and rise without the use of gluten. When water and gluten combine, the components inside become active and form a flexible substance resembling gum, which forms the structure of the bread. This is the structure of many wheat-containing bakery products we consume.
Most people can easily digest gluten protein. In addition, there are people who are sensitive to gluten and gliadin proteins found in wheat. This sensitivity they have causes their bodies to react. Most people with this sensitivity have celiac disease. There are also people who may not yet be diagnosed with celiac disease but have gluten sensitivity. For people other than these people, gluten is not something that should be avoided at all.
If you ask what the harms of gluten are to people with this sensitivity, the protrusions in the intestines, which play a major role in digestion, may disappear due to gluten consumption in people with this disease. In the future, it causes the small intestine to lose its function and thus destroys the digestive system, making it difficult for the intestines to absorb.
As for foods that do not contain gluten, rice, corn, chickpeas, peas, or all vegetables can be given as examples. In addition, foods such as fruits, meat, chicken, fish, legumes, eggs, nuts, milk, yoghurt, cheese and buttermilk do not contain gluten. Oils such as olive oil, sunflower oil, corn oil and soybean oil do not contain gluten. The person should consult a healthcare professional to learn and implement the diet appropriate for him/her. Individuals with gluten sensitivity should ensure that there is no contamination in the foods they consume. I should also point out that not every indigestion problem is gluten sensitivity, and gluten should not be the scapegoat. your celiac diet I recommend that you do it under the supervision of a specialist. I wish you healthy days.
