During these processes, the oil is exposed to high heat and glycidyl esters, which are called carcinogens, emerge.
Palm olein is more suitable for frying because it is liquid at room temperature. As with every vegetable oil, when frying palm olein is applied, the formation of acrylamide, which is carcinogenic, occurs.
The Effects of Palm Oil on Health:
Tocopherol (E vit), which is high in palm oil, is a component that has important effects such as inhibiting cholesterol synthesis by acting on liver enzymes. In addition to studies showing that palm oil raises cholesterol levels, there are also studies showing that it has no effect on cholesterol levels and lowers cholesterol levels.
